Onion rings

Onion rings

Ingredients

  • 300 g big red onions
  • 2 eggs well beaten
  • 2 tablespoons all-purpose flour
  • 4 tablespoons shredded toasted bread
  • salt
  • olive oil

Preparation

  1. Peel and clean the onions and cut them in thick rounds. Salt them and dip them into the beaten eggs, the flour and then into the shredded toasted bread.
  2. Into a frying pan out enough olive oil and fry a handful of your onion rings a time
  3. When they are ready, remove to paper towels or brown paper bag to drain thoroughly from the excess oil.
  4. They can be served with roasted chicken or as an appetizer with some sauce of roquefort cheese.

Potato-salad

Potato-salad

Ingredients (6-8 serves)

  • 1 kg potatoes
  • 4 fresh onions
  • 1 medium red onion, peeled
  • 2-3 1 bunches of fresh parsley
  • 1 cup mayonnaise
  • 1 tablespoon prepared mustard
  • Salt, white pepper

Preparation

  1. Wash very well the potatoes without peeling them. Add them in a large pot of salted boiling water.
  2. When they can be pinched by a fork, drain the potatoes and leave them to cool.
  3. Start peeling and chopping them in smaller pieces. Place them in a bowl and combine the fresh onions, the red onion, the parsley, all of them chopped.
  4. Mix well all the above ingredients and add a pinch of salt and pepper.
  5. Whisk together mustard and mayonnaise and when the mixture is smooth enough, add the dressing to your salad and steer lightly before you are ready to serve it.

Some variation: Hard-boiled eggs can be added also, chopped in 4, or an apple, peeled and chopped in little pieces, also. Even more, instead of mayonnaise you can also use yogurt mixed with one tablespoon prepared mustard.

French onion soup

French onion soup

Ingredients

  • 700 g red onions
  • 50 g fresh butter
  • 2 teaspoons olive oil
  • 50 g all-purpose flour
  • 1 ½ litre vegetable juice
  • Salt, pepper
  • 6 slices of bread
  • 6 cups shredded graviera cheese

Preparation

  1. Peel the onions and cut them into thick rounds.
  2. Heat the oil and butter in a big pot and mix inside all the onions and saute them while stirring them continuously until they are brown and soft. This procedure will last for about 20 minutes at least.
  3. After that, add plain flour and stir very well, while mixing with the vegetable juice, you add a pinch of salt and pepper.
  4. Leave your mixture to boil for half an hour at least.
  5. Meanwhile, toast your 6 slices of bread from both sides in the oven
  6. Serve your hot soup into oven-proof bowls, add into the middle of each bowl a toasted slice of bread and then, add loads of shredded graviera cheese on top. Put your bowls into the oven at 220o of Celsius and grill them for 5 minutes until the cheese has melted.
  7. Finally serve your hot soup on your table .
